Zucchini Bread

So, in the interest of getting more veggies in the kids diet, we dug out an old recipe from grandma.

1 1/2 cups all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 teasppon ground nutmeg
1 cup sugar
1 cup finely shredded, unpeeled zucchini
1/4 cup canola oil
1 egg
1/4 teasppon finely shredded lemon peel

1. Grease bottom and sides of 8x4x2 loaf pan & set aside.
2. Combine flour, cinnamon, baking soda, baking powder, salt and nutmeg in a medium bowl.
3. In separate bowl combine sugar, zucchini, oil, egg and lemon peel being sure to mix well.
4. Add dry mixture to zucchini mixture, stirring until moistened.
5. Pour batter into pan and bake 55-60 minutes in a preheated 350' oven.
6. When wooden toothpick inserted in center comes out clean, bread is done. Cool in pan on cooling rack for about 10 minutes, then remove from pan to cool completely.

  1. That looks so good. I've been looking for a good zucchini bread recipe. My brother-in-law loves it. He just had back surgery, and I thought I would make him some.
